Within a few hours you can reach unique places in the world. Mount Amiata and its routes, Lake Bolsena, the natural hot streams of Saturnia for a few hours of relaxation: there is so much to do and discover in Maremma, a perfect destination for us eco-travelers.

In this magical Tuscan place we can admire a wide variety of environments and ecosystems: in a few kilometers we can pass from the hills to the sea, from the mountains to the lagoon. Our journey could start from Manciano, one of the most beautiful villages. From here we start biking and, through nature and its sounds, passing from Montemerano, we arrive at Saturnia hot springs. From here you can easily reach the wonderful village of Pitigliano, which will leave us breathless.

We can then discover the Etruscan Archaeological Park of Vitozza, then climb and explore the incredible Mount Amiata.

Starting from scratch, in the nature of Tuscany. Interview with Ilaria di Pian delle Ginestre

1. How was the glamping Pian delle Ginestre born?

Pian delle Ginestre was born from a lucky meeting, the one with my partner Roberto. When I first met him and he told me that he lived in Sassetta, despite being Tuscan (in the province of Lucca), I asked him: “Where is Sassetta?”.

In just one moment I fell in love with these beautiful places.

I left my job in the family business and then I moved here, where my passion for cooking, hospitality and conviviality has merged with Roberto’s ability to give shape to any material.

This is how this eco-glamping project was born: from the desire to start again with a project that wasn’t only compatible with our dreams, but also with our love for nature.

2. Which are the eco strategies used in your glamping?

  • The tents are perfectly integrated with the forest around them. What’s more, to install them we did not use a single brick.
  • We only use bio cleaning products. In addition, we use waste water for irrigation thanks to our phytomediation system.
  • The lights are low-energy and they have photocells for automatic shutdown.
  • All biodegradable waste is used to produce compost. The rest of the waste is, obviously, differentiated.
  • We have an olive grove and a small vegetable garden where we produce organic food. In addition, all the products we use to cook come from local farms.

In addition, we do not have a TV and, also, I would want this structure to be wifi free. Nowadays, this could seem a little bit difficult, since so many people do smart working and need internet. However, this could be appreciated by people who just want to switch off.

Since this is a protected landscape area, we are not allowed to place photovoltaic panels. However, we are considering to install a charging station for electric cars.

We have so many projects, but we are a small company so, we must go on one step at a time.

3. Which kind of holiday do you offer to your guests?

This is the right place if you want to listen to the noises of the forest or just discover its smell but at the same time, sleeping bags and uncomfortable beds aren’t your cup of tea. Additionally, here you can walk or ride your bike around the beautiful landscapes which surround the glamping or just go to the nearby spa.

A place where you can taste healthy and genuine foods, full of tradition. We want to offer our guests the chance to have a guided hiking itinerary, with a stop in one of the many wineries of Bolgheri.

4. Which are the green tours and things we cannot miss nearby?

We are in a unique territory and there are so many things to do: the sea is 15 minutes away. Also, we are in a forest full of trails for trekking, bicycles and horses.

We are surrounded by villages full of charm and history and some of the most important art cities of Tuscany.

We have the spa of Sassetta just 700 meters away and, dulcis in fundo, the vineyards and the good red wine of Bolgheri are 10 minutes from here.

In addition, we work with expert guides and bike instructors to offer customized itineraries to discover the territory. We are planning to organize experiences for our guests that include:

  • Wine and food tastings
  • Acess to the spa
  • Personalized fitness and wellness treatments

Even though estimates vary, the Consultative Group on International Agricultural Research reports that ⅓ of our greenhouse gas emissions come from farming and food production (Source). The UN FAO says that till we attempt to reduce these greenhouse gas emissions, they can rise in the future.

Studies have found that organic farms release a lot less greenhouse gas emissions than non-organic farms. Healthy soils are the primary source of carbon storage, and organic farming ends in raised carbon sequestration. The U.K’s Soil Association calculates that if all U.K. farming were shifted organic around 1.3 million tonnes of carbon can be taken by soil each year.

Only the U.S. recognized a record of $43 Billion in organic food sales in 2016. But why is organic food so loved by many people? And should you consider buying it? Let´s look at it closer.

Organic food- what is it?

Word “organic” means the process, in which the food is produced. Standards of farming vary worldwide, however, organic farming cannot use chemicals, hormones, antibiotics, or genetically modified organisms (GMO). Organically raised animals for meat, eggs, honey, and dairy products need to be feed organically and have the access to the outdoors. They may not be given antibiotics, growth hormones, or any animal by-products.

A few days ago, I spoke to my grandma about food. She told me about the plums she bought. The same plums younger generations buy from the supermarket and do not see anything bad about it. She complained…a lot… Plums she had on her garden for years, before the supermarket trend came, had a sweet taste, great smell and- some defects too. However, the plums she bought from the supermarket were tasteless and you wouldn´t find any smell as well. On the other hand, they looked perfect– all in the same size and in a beautiful color. This is a great example of the difference between organic and conventional food.

Most of the younger generation, especially those living in urban areas, do not have the chance to taste the real plum from the grandma´s garden. However, after only a short time eating organic, your body will definitely feel and taste the difference. And what is more- all the junk food full of processed sugar you maybe loved before will suddenly have a bad, artificial after-taste.

Fresh food always tastes better. Because organic food doesn´t contain any preservatives, which would make it last longer, they are fresh. It is however important to check where is it the product from. Local farms are usually a sign of freshness.

Organic food does not contain any chemicals such as pesticides, fungicides, herbicides, and insecticides, and animals are not given antibiotics or growth hormones. Chemical pesticides have been linked to different kinds of cancers, leukemia, infertility, convulsions, immune and endocrine disorders, Parkinson’s disease, depression, and many others. Based on a study by Marcin Barański et al., organic food “contain higher concentrations of a wide range of nutritionally desirable antioxidants/(poly)phenolics, but lower concentrations of the potentially harmful, toxic metal Cd.” Another study about organic fruit and vegetable from Newcastle University in 2014 also proved that organic food help prevents cancer and heart disease and boost the immunity of 19-69% more than conventional food would thank the higher quantities of antioxidants.

It is therefore scientifically proven, that organic products prevent major and minor diseases and illnesses. When we look at it from the financial point of view, even though organic food is often more expensive than non-organic, lower health care costs and less likelihood of missing work in the future will help you save some money from a longer perspective. Yes, these are hidden advantages, but isn´t it better to think about your health before you are actually sick?

Thanks to all the chemicals conventional food contains, it is often connected to birth defects, childhood leukemia, ADHD, learning disorders, autism, and nervous system disorders in children. According to the Environmental Working Group´s report, the umbilical cord blood of 10 newborn babies showed more than 200 different chemicals in each of them. More and more studies also link pesticides with ADHD. Maryse Bouchard et al. from the University of Montreal and Harvard University made a research about this topic as well. They examined the urine of more than 1100 children aged 8-15 and found that the ones with the highest levels of dialkyl phosphates, which are the breakdown products of organophosphate pesticides, had the highest incidence of ADHD. Toxins are all around us, but most of it we intake in the form of food. Organic food can be therefore considered as a good choice to prevent not only adult diseases but also prevent children from all the toxins we daily consume from our plates.

Support the Local Economy

Buying organic food is closely connected to buying local food. If you do not want to support the marketing of big corporations and the transformation of food for long distances, even though you can grow the same food at home, farmers’ market is a good choice. However, be aware of the fact, that not all of the farmers grow organic food. Find your farmer, who does not use any chemicals and antibiotics, and start buying your food from him. To do so, you are supporting the local community´s economy and help to create jobs at the same time.

With no harmful chemicals, topsoil erosion, as well as pollution, would improve. Farms that do not use any chemicals, antibiotics, or other harms reduce not only pollution and soil erosion but also use less energy, conserve water, and increase soil fertility. All the chemicals from conventional farming kill not only important insects but also birds and other animals. The use of antibiotics in the meat industry also helps to create antibiotic-resistant strains of bacteria. Organically raised animals have access to the outdoor and therefore they are healthier. Organic meat and milk are proven to be 50% richer in omega- 3 fatty acids than conventionally raised versions.

Not everything needs to be organic.

We agree that organic food might be more expensive than non-organic. It is perfectly fine to choose a golden mean and buy both, organic and conventional food. Here are some tips about what to buy organic and what is OK to buy conventionally.

Conclusion

Organic food is not about the trend. Few generations ago, all food was organic. Not that many people were sick, cows could see the sky and everything tasted real. With the growing population and demand for food, we changed the behavior and started to use chemistry a lot. People have had everything they wanted in 24/7 supermarkets. They get used to it. However, the amount of toxins and diseases thanks to our consumption is rising. Maybe we can try to take step back and start buying organic alternatives again. Let’s see what happens. You understand the labels in shops, you know where the farmer’s markets are and you even have your own local farmer, whose farm is organic. However, struggle is real when you decide to travel. Here are some tips about how to eat healthy and organic while traveling.

We suggest you to make some research before you go on your vacation. First of all, it is a good idea to check the hotel you will stay at. Do they offer organic meals? Do you have breakfast included? Where is the nearest organic shop? Which restaurants are preparing healthy organic food and are nearby? The answers to these questions can be found easily online and save you a ton of time on your vacation.

Preparing Healthy Snacks for Your Journey

Some people have specific food demands while travelling. For example, they need just salty snacks or they seek only fresh food. It is good to know what kinds of food your body require while travelling and make the “snack plan” based on it.

Firstly, a reusable water-bottle, forks, plates, a small sharp knife, or cloth napkins are good to pack for your trip. You do not only limit the amount of waste you would produce from plastic bottles or plastic cutlery, but you will be sure that everything is on hand when needed.

Generally, it is good to have snacks on hand like nuts, dark chocolate, dried fruit, or fresh fruit like apples. However, snacks depend on the type of trip. Are you travelling by car or by plane?

Airport food has a bad reputation. Most of the airlines fail in offering nutritional and low-calorie options. Preservative-filled airplane food doesn´t even taste good. Therefore, fix a snack pack before going to the airport. If you are taking a reusable water bottle, you have to empty it before the security check. All the dried food like nuts, organic granola bars, dried fruit, dark chocolate or sunflower seeds are of course allowed. But did you know you can also take a salad with dressing, fruit, and vegetable or a sandwich with you? The best fruit to bring with you is the ones which are non-perishable like apples, bananas or oranges. From veggies, you can take broccoli or carrot. You just have to make sure that you finish all of the fruit and vegetable before landing at your holiday destination. Bringing fresh fruit and veggie across borders is usually forbidden.

At the airport, you can buy fresh juices or smoothies, which will boost you up with energy. As well you can buy a single-serving pack of guacamole or hummus (look for organic ones or take ones from home) and combine it with home-prepared carrots/celery or whole-grain crackers. This will make a perfect snack full of healthy nutrients.

TIP: Put some organic snacks in your check-in baggage so you will save some and eat them when you arrive hungry at your hotel.

Travelling by car is easier. You can take more food with you or buy some in shops on the way. If you want to bring some perishable organic food with you, we suggest taking also electric cooler or a cooler bag, where you can store for example pre-peeled hard-boiled eggs, vegetable salads, berries, organic cheese, luncheon meats or mentioned guacamole and hummus.
You can also make your own smoothie at home, put it in reusable bottles, and drink it later for breakfast or just as a refreshment during the way.
Don´t forget protein. You can pack nut-butters, organic protein bars, almonds, or other sources of protein with you. Use an electric cooler for storing some of your protein sources.

The fruit is a great source of slow-release energy for drivers. Put some grapes, cherries, or chopped melon/apples into the containers, so the driver has something small to eat always on hand.

Shortly before you reach your hotel or shortly after you accommodate yourself, go to nearest grocery store and stock yourself with some healthy organic food. If you have mini-fridge in your apartment, it is even better as you can use it for your healthy meals. If you already know you will not use minibar, ask the staff to take the food away, so you have more space for your own food. It is also important not to forget to drink. Ask the staff if the water is drinkable and if not, buy some big bottles of water you can use during your vacation.

Check local markets, ask people where they grow their produce or raise animals. If you find that markets might be organic, local restaurants might be as well as they often shop at these markets.

In the countryside, in nature, between Pisa and Volterra, Marilena and Bruno, after years of searching, found the house of their dreams. Marilena lived in Turin, but when she was 18, she left the city to move in the Tuscan countryside, where she meets Bruno, who has always lived here.
Together, they find an old brick building with just over half a hectare of land around. They purchase and restructure it according to the principles of green architecture: they use 100% clean energy, recover the rainwater, produce all the fruit and vegetables necessary, oil, detergents and even some cosmetics. The rest of the food is purchased from local producers and it’s always biological. With the organic part of the collection they produce compost for the garden.
